Nowadays it is not questionable that the trend of consumption of organic products is booming, but why ?, mainly because consumers, in a high percentage, has a tendency to acquire healthy products although there are different points of consumer attention towards the organic product.

Consumers of organic product are segmented into 4 groups:
1- The Eco-Authentic Consumer
It is a consumer who is aware of health and the environment, as well as complying with responsible production at source of the products.
2- The Healthy Consumer
Purchase the organic product for nutrition and health to the same without taking into account the other environmental benefits
3- The trend consumer
They are consumers of eco products because they are fashionable, they are sure that they help them take care of themselves but do not take into account the nutritional aspects or sustainability.
4- The consumer Sibarita
They buy organic products for their gourmet nature and for their more authentic and natural taste.
Whatever the type of consumer the reality is that the sector of organic products is a sector on the rise and will not stop growing, in Spain it is curious that it is one of the countries of the European Union that is in the queue in terms of consumption of eco product but nevertheless is one of the largest producers in the organic sector.
Perhaps the reason is the ignorance on the part of the population of what is and what an ecological product means, it is best to start by explaining the difference in the nominative, " Ecological "," Bio "and " Organic "are three clues that can lead to consumer confusion.
According to the European regulation that regulates organic food, plant the three terms as synonyms, what changes is the linguistic issue, ecological would be the term in Spanish , Biological would be the name in French and Organic "Organic" in English , although the certification that governs the product will be the one that indicates the labeling, a product French may indicate "Ecological Production" and a German product may be "Bio", in addition, the labeling must include the name of the entity, public or private, which certifies and guarantees that the protocols for organic production have been followed.Â
The way to distinguish eco products from conventional ones is by certification in tagging , all eco products have at least , the European distinctive of organic production, can also be distinguished with the certification granted by each autonomous community in Spain.
Regarding the differences compared to conventional products, we can say that those that directly affect our health are the most outstanding, produce food free of fertilizers, herbicides, medicines and various chemicals we are going to avoid a long-term damage that currently makes a big dent in consumers since in recent years have been increasing the action of many diseases in the population and can be related directly with food habits and substances that contain many foods.
The quality of food, usually tends to think that the organic product is of higher quality, if it is true that they tend to have a very high quality because the eco producer seeks quality in farms that tend to be rather small , but the conventional product can have the same quality even if it is more harmful to health.
The environmental impact, the eco product is subjected to many controls in its production, the environmental impact that is generated is very low, compared to the fields of intensive production would practically be zero, in the case of Saffron would be one of the ecological crops with less impact since it does not even have a high water requirement.
The price is another difference to take into account, the eco product has more costs associated with its production, by not using herbicides or other substances you have to perform a mechanical or manual work, this directly affects the productive cost, also the Controls and certifications have a cost that causes the final price of the product to increase.
Today most organic products are accessible to most consumers but that is not fair, they should be accessible to the whole population, we are accustomed to European funds for the pack are being squandered every year without making a reform that makes them fairer and more adjusted, are subsidized banks that cheat their customers, etc, etc., but not there is to cover some extra costs that would make the eco-accessible products for the whole population, that is, we do not live in a fair world, but the nonconformists will continue to work hard to achieve it.
In my particular case we are dedicated to production of saffron from Jiloca and I am an operator and ecological producer in Monreal del Campo - Teruel, we are innovators of " certified organic farming ", I say this because saffron, in the Jiloca region, has always been produced without using chemical products in its process, but the first certification of saffron from Jiloca was that of Azafranes Jiloca, which is my trademark, for many years. we have been working very sensitized with the environment and the sustainability , for this reason we work the Eco-innovation and the Eco-Design.
Through eco-innovation we look for optimization of all production phases through the modification of production patterns, trying to make efficient use of resources by analyzing the life cycle of the plant to reduce the costs of pollution control and waste management.
Through the eco-design we design sustainable products that minimize the environmental impact during the whole life cycle of the product, from its production to its use and removal, always with a continuous improvement so that they have the lower environmental impact.
The last designed format is a metal can that once the saffron is exhausted, it can be reused for other spices, giving it a reuse in each client's own house and that its life cycle can lengthen without generating waste.
