- Flower Harvesting

The harvest takes place early in the morning, when the flower is still closed (in bud) and the threads still retain all their freshness, which will be noticeable during toasting. If the flower opens, the threads diminish and can become contaminated with dirt if it is a rainy day.

- Flower Removal

The removal process is carried out manually by properly trained personnel. Under the constant supervision of the supervisor, the workers must cut the flower at the base and obtain the three stigmas together with the minimum amount of stem. In this way, the whole thread is obtained, and once toasted, the saffron maintains a magnificent appearance. It is also important that the flower remnants and stigmas are removed while the saffron is still green to avoid subsequent handling during cleaning. If the saffron is cleaned after toasting, it breaks down and its quality diminishes.

- Saffron Toasting

Toasting is the most important part of the process of obtaining quality saffron. This step is always carried out by someone with extensive experience and a proven track record of success in previous seasons. It requires constant attention to the toasting process. It is done over a very gentle heat source placed under a sieve (a traditional utensil made of silk fabric), and the saffron must be turned as the artisan deems necessary. The goal is to eliminate all moisture and ensure the saffron maintains a vibrant color. The result should be a bright red and completely dry saffron. If the saffron retains moisture, it will only darken after drying, and if it dries out too much, it can burn, resulting in the loss of the harvest.
