TRUFFLE IN ITS JUICE TUBER AESTIVIUM

The summer truffle or Tuber Aestivum grows in a habitat similar to that of the black truffle; that is, along with the roots of Mediterranean forests, although it does not require environmental conditions as specific as the black truffle in terms of soil composition and humidity. This translates into greater ease of cultivation but also less spectacular properties, such as a less intense aroma than that of the black truffle.

Also known as the San Juan truffle, the summer truffle is harvested between the months of May and September.

Dark on the outside and with more pronounced pyramidal shapes, it is easily differentiated from the black truffle on the inside.
